A "Bite" of History
Our first foray into Lundberg organic brown rice cakes was in the late seventies, when Harlan Lundberg brought a rice cake machine home from a food trade show and convinced his brothers to try it. They started simple, with Lightly Salted Rice Cakes made from freshly milled organic brown rice. Since then, we’ve steadily innovated and added new rice cake varieties in all different shapes, sizes, and flavors. Today, we have nine classic Lundberg Rice Cakes (including seven organic brown rice cakes), six thin rice cakes (we call them Thin Stackers), five Chocolate Thin Stackers (because who doesn’t love a chocolate rice cake?), and five new Rice Cake Minis for a grand total of 25 different types of Lundberg brown rice cakes! We’ve been perfecting our Rice Cake Minis recipe for generations. Really! We first made “Mini Rice Cakes” in the late 1980s and early 1990s. They came in savory-only rice cake flavors that reflect the taste of the time. Ready for this? Brown Rice, Sesame, White Cheddar Popcorn, Nacho Cheese, and (wait for it!) Creamy Dill. This time, we’ve tailored the recipe to a new generation of health-conscious snackers who are hungry for Mini Moments!
