Instructions

  1. In a large container, combine the black rice, hot water, and oat milk. Let it steep overnight (8–12 hours) at room temperature or in a fridge.
  2. In the morning, strain the liquid, reserving the rice. To the strained liquid, add sugar, vanilla extract, and butterfly pea powder and ube puree.
  3. In a blender, blend the liquid on high until completely smooth. The texture should resemble heavy cream.
  4. Taste and adjust sweetness or thickness as needed. Chill before serving.
