  1. Put the rice, water, dash of salt and sherry vinegar in a pot and bring to a boil. Cover and reduce the heat to a simmer. Cook the rice for 35 to 45 minutes or until it is done and the liquid has fully absorbed. Stir every five minutes or so.
  2. While the rice is cooking, place a small pan on medium high heat and add the shallots and olive oil. Cook, stirring occasionally, for 10 minutes or until the shallots have started to become translucent and brown.
  3. When the rice is done add the shallots, cherries, almonds and basil into the pot and stir.
