Instructions
- Add 1 cup of Lundberg Family Farms Organic Wild Blend Rice and 1 ¾ cups of water to a small saucepan and bring to a boil. Cover with a tight-fitting lid, reduce heat to low-simmer, and cook for 45 minutes. Remove from heat (with lid on) and steam for 10 minutes. Fluff with fork.
- Drain can of cannellini beans, measure 1 cup, and add on top of rice. Cut cherry tomatoes in half lengthwise and add to the bean layer. Slice jalapeno and add to the same layer.
- Slice green onion and add to next layer with cilantro leaves.
- Drizzle with avocado ranch and garnish with radish. Enjoy!
