- Using a fine mesh sieve, thoroughly rinse 1 cup of quinoa under cold water for 1-2 minutes and drain.
- Combine 1 cup quinoa, 1 1/3 cup water, and 1 Tbsp. butter or oil (optional) in a 2 qt. saucepan and bring to a boil. Cover with a tight-fitting lid.
- Reduce heat to maintain a low simmer and cook for 17 minutes, remove from heat and let steam with lid on for 5 minutes.
- Once quinoa has cooled, mix with the rest of the ingredients. Enjoy
